Every Sunday from 06:00 AM to 11:30 AM, this totally unique Market provides an extensive and complete range of the freshest, absolutely straight from the farm, guaranteed Certified Organically grown seasonal (and interstate) vegetables and fruit.

Organic Gold Coast Farmers Market

DELISH Vegan Cheese Vegetable & pasta Bake.

Super Easy wholesome and delicious 😋
Steam some Vegetables, cook your pasta, mix together with the cheese sauce & bake in the oven.

I doubled the mixture and had delicious leftovers for school lunches.

CHEESE SAUCE
2 cloves of Certified Organic Garlic, minced
2 ½ Tbsp. Certified Organic Coconut Oil
2 ½ Tbsp. Spelt Flour (use any flour or gluten-free if required)
2 cups plant based milk
1 1/2 tsp. Certified Organic Dijon mustard
1/3 cup Lotus savoury yeast flakes
½ tsp. Certified Organic paprika
Salt & pepper to taste

BAKE
1 cup Certified Organic broccoli florets, lightly steamed
1 cup Certified Organic cauliflower florets, lightly steamed
1 cup Certified Organic Carrot lightly steamed
1 Certified Organic Leek

2 cups of Certified Organic cooked pasta of your choice (use gluten free if needed)

TOPPING
1 cup of Savoury Yeast Flakes
½ cup wholemeal breadcrumbs (optional, use gluten-free if required)
3 TBSP. Certified Organic parsley, chopped

METHOD:

1. Preheat over to 180oC and lightly oil a medium casserole dish.

2. Lightly steam vegetables (careful not to overcook them)

3. Cook the pasta and rinse once done.
Then place in a large bowl.

4. Cheese sauce time. Place a saucepan over medium-high heat and pour in coconut oil. When the oil begins to warm, cook minced garlic, then add flour and cook off for 1-2 minutes, stirring continuously with a whisk or wooden spoon. Add milk and whisk continually to prevent lumps forming until sauce starts to thicken. The sauce should start to thicken a few minutes after boiling point. When the sauce has reached the desired thickness, remove from heat, and stir in mustard, nutritional yeast, onion powder, paprika, salt and pepper.

5. In a large bowl combine cooked pasta, steamed vegetables. Mix through cheese sauce and pour into prepared casserole dish.

6. Sprinkle savoury yeast flakes, breadcrumbs and parsley on top. Bake in the oven for 20-25 minutes or until golden on top.

Garnish with cherry tomatoes and lettuce. 😋
